Cillar de Silos is in the town of Quintana del Pidio (Burgos). The aging cellar is at an altitude of 856 meters above sea level. It has a mild climate without a dry season, with mild summer. The average annual temperature is around 11.3ºC. In winter temperatures of the order of -0.6ºC are reached while in summer they reach 27.5ºC. The average annual rainfall of the area is 475 mm.
The barrel aging is done in a basement of a ship from the late nineteenth century. The bottle rack has two zones: one is located on the upper floor of the basement and another in which an underground cellar from the end of the 17th century is used. The name of Cillar de Silos is an homage to the monk who was historically responsible for the administration in the Monastery of Silos. The supply of wine for the order during the seventeenth century was in Quintana del Pidio. The cillero, was the one in charge to organize the pantry or ciliary, with the wine and the necessary foods for the religious.
